Nutrition and Dietetics Curriculum
The M.S. in Nutrition and Dietetics runs for two full years—Fall, Spring and Summer semesters—beginning with academic coursework and culminating with a blend of supervised practice combined with classroom experiences.
The Program will offer students two concentrations that they can explore both through classroom learning and supervised practice.
1: Culinary Nutrition: Culinary nutrition studies will receive expanded opportunities to acquire and refine their skills for counseling clients on healthful, affordable, flavorful cooking techniques.
Students choosing the culinary nutrition concentration will complete assignments, term papers and projects with a focus on food, recipes, teaching clients to prepare culturally-appropriate and healthful foods.
2: Food Justice/Policy: Food justice/food policy students will receive expanded opportunities to explore issues related to food accessibility, food assistance programs, and food-related sustainability and environmental issues.
Students choosing the culinary nutrition concentration will complete assignments, term papers and projects with a focus on how food availability, cost, quality and other factors impact the health of particular populations.
